Shakshuka: gluten-free hangover food sent from heaven

I may have had a bit to drink last night. I may have fallen over on the train home. Oops. See the soon-to-be glorious bruise below. I may or may not have been laughed at by several strangers, but I couldn’t possibly say.

This is why you shouldn’t drink, kids

Needless to say, I’m feeling a little fragile today. Scrolling through Facebook, I saw a post by Gourmet Chick: How to make Shakshuka and I had a bit of a drool before I realised I had almost all the ingredients needed at home. Once I had psyched myself up to get to Tesco for a few more bits and bobs, I was fully ready for the greatest hangover brunch in recent history.

The dish itself is fully gluten-free, and I bought some of Tesco’s own gluten-free pita breads, which are actually pretty tasty when toasted. I added courgette and chorizo, but you can basically modify it to suit whatever is left in the fridge! 🙂

This is a dish found in North Africa and the middle east, and you can obviously leave out the feta cheese if you are lactose/dairy free.


Fry the onion and peppers in spices

Add chopped tomatoes

Poach eggs in tomato sauce
